Savory Tofu Scramble

Sometimes going plant-based isn't about exploring new foods and flavors, but keeping it simple by replacing non-vegan recipes. This savory tofu scramble is for plant-based eaters and carnivores alike, as it checks all of the boxes in terms of flavor, texture, and presentation, and when spiced right tastes remarkably close to an egg scramble. The substitution of tofu for egg also saves water and land use. This breakfast fuels your body and saves our planet, what a great way to start the day!

RECIPE
INGREDIENTS
- 1/2 block tofu (8oz)
- 3/4 cup veggies of choice
- 1 tsp oil
- 1 tbsp plant milk
- 1 tbsp nutritional yeast
- 1/2 tsp turmeric
- 1/2 tsp garlic powder
- salt and pepper to taste
- optional: 1/4 tsp chili powder
METHOD
Press the tofu so that as much liquid as possible drains out, and then crumble it into a bowl. Pour the oil into a pan with the vegetables of choice, and saute until 80% cooked. Add the crumbled tofu to the pan along with all of the spices. Add the plant milk if needed. Saute until the vegetables are fully cooked, and spice to taste. Serve over toast and enjoy!
