Banana Blender Muffins

The best type of baking requires minimal dishes and maximum tastiness. These banana muffins only need a blender and some muffin tins, and are absolutely addicting. This recipe can be made into mini muffins (as shown in the picture) or regular sized muffins. The only difference would be the baking time, about 5-10 minutes longer for larger muffins. This recipe belongs to Jazmin Tyler (instagram: @jaztyler), and is by far one of my favorite easy batch-bakes.

INGREDIENTS

- 1 1/2 cups oats of choice

- 2 bananas

- 1/4 cup maple syrup or honey

- 1 flax egg (3 tbsp water 1 tbsp ground flax)

- 1/4 cup oil of choice

- 1/2 tsp cinnamon

- 1/2 tsp vanilla

- 1/2 tsp baking soda

- optional add-ins: walnuts, chocolate chips, or cocoa powder


METHOD

Preheat oven to 350°F. Blend the oats into a flour in the blender. Make the flax egg, and let sit for 5 mins or until thick. Combine all ingredients into the blender, and blend until smooth. Mix in optional add-ins with a spoon, and try not to overmix. Pour batter into greased muffin tins and bake for 18 mins (regular sized muffins) or 13 mins (mini muffins). Stick a toothpick into the middle until it comes out clean, and then let cool before taking them out of the tins. Top with almond butter and enjoy!
