Period Cookies

If you have ever been on your period, you understand the crazy cravings. All I want is chocolate for a whole week! When it's my time of the month, I like to prepare a batch of my Period Cookies, which are the perfect sweet treat for that week. They are packed full of antioxidants, fiber, magnesium, and delicious dark chocolate. Not only do they satisfy your cravings, but they can help with cramping, and give you the nutrients you may otherwise be lacking. These cookies are delicious, and of course can be made during anytime of any month. They are also 100% plant-based, and can be altered to fit pretty much any diet. RECIPE
INGREDIENTS
- 1 cup rolled oats
- 1 cup flour of choice
- 1/2 tsp cinnamon
- 1/2 cup maple syrup
- 1/3 cup melted coconut oil
- 3 flax eggs (3 tbsp flaxseed + 9 tbsp water)
- 1/2 tsp baking soda
- 1 handful pumpkin seeds
- 1/2 cup dark chocolate chips
METHOD
Preheat oven to 350°F. In a bowl, combine the rolled oats, flour, baking soda, and cinnamon. Mix until evenly distributed. Add the maple syrup, melted coconut oil, and flax eggs and mix until a sticky dough has formed. Add the pumpkin seeds and chocolate chips and mix until evenly distributed. Scoop onto a baking tray and bake for 12 minutes. These cookies should seem undercooked when coming out of the oven, but will be the perfect texture once cooled. Enjoy!
