Chewy Chocolate Chip Oatmeal Cookies

Some things in life are just too good to be true, with these cookies being one of them. These are by far my favorite cookies to bake and I have yet to meet someone that doesn't like them. These Chewy Chocolate Chip Oatmeal Cookies are 100% vegan, and 100% addicting. By substituting the butter and eggs with vegan options, less resources are going into raising animals, which positively impacts our Earth. These cookies not only save the world, but rock my world. The recipe is an adaptation of from fitfoodiefinds.com.

RECIPE

INGREDIENTS

- 1.5 cups oats (any kind works but quick oats are best)

- 1 cup flour (white or white whole wheat works best)

- 1/2 tsp baking powder

- 1 tsp cinnamon

- pinch of salt

- 1/2 cup chocolate chips

- 1/2 cup vegan butter

- 1 cup brown sugar (I like to use closer to 3/4 cup to cut the sweetness)

- 1 flax egg (3 tbsp water 1 tbsp flax)

- 1 tsp vanilla extract

METHOD

Preheat the oven to 350°F. In a large bowl, combine the oats, flour, baking powder, cinnamon, and salt. Set aside. In another bowl cream the butter and sugar together until smooth. Add in the flax egg and vanilla, and cream until light and fluffy. Slowly add the dry ingredients into the wet and mix well. Add the chocolate chips in and mix until combined. Use either a spoon or an ice cream scoop and scoop the dough into balls on a baking tray. Bake for 10-12 minutes, or until tan around the edges. Take out of the oven and let cool before enjoying. Store in a sealed container at room temperature.
