Comforting Lentil Soup

Soup is soul food, and this lentil soup speaks to your soul. It nourishes your body with veggies, lentils, and lots of flavor. This soup is perfect for a hectic weekday because it is easy and delicious, but it's also great for a lazy sunday with it being warm and comforting. Overall, this soup is a great go-to, and reheats very nicely, so it makes for good leftovers. The veggies used can be interchanged with your favorite veggies, or just whatever is left in your fridge. The type of lentils can also be switched out, but in my opinion french lentils work the best. Enjoy!

RECIPE
INGREDIENTS
- 1 tbsp olive oil
- 1 medium white onion, chopped or diced
- 2 cloves garlic, minced
- 3 medium potatoes, chopped
- 2 large carrots, peeled and chopped
- 2 tsp cumin
- 1 tsp salt
- 1 tsp pepper
- 1 can (15 oz) diced or crushed tomatoes
- 4 cups vegetable broth
- 1 cup dry french lentils
- 1 cup spinach or kale
METHOD
In a large pot, add the olive oil and chopped onions. Saute the onions until they are translucent, then add in the minced garlic. Cook until fragrant. Add the carrots, potatoes, salt, pepper, and cumin. Saute for about 5 minutes or until fragrant. Add the tomatoes, vegetable broth, and dry lentils. Put a lid on the pot and let simmer for 40-45 minutes, and then add in the spinach or kale. Let simmer for 10-15 more minutes, depending on how cooked everything is, and then spice to taste. Once everything is cooked, serve and enjoy!
